Our oil, which is produced in limited quantities, comes from olives harvested by hand, without no mechanical equipment used, and taken to the mill every evening after harvesting.
The cold pressing, carried out in a modern plant in a continuous cycle, enables us to obtain an oil with very low acidity and level of peroxides (average acidity of 0.2% and n° of peroxides of 2.5 meq O2 / kg) which maintains its organoleptic characteristics unchanged for a long time.
